Today I am making soup for my work week lunches!
I love making them and not really following any set recipes!
I sauted onion, carrots, celery, while my navy beans were doing their quick soak.
I boiled them for two minutes and take off the heat and let sit for an hour, rinse and throw in the pot with the garnier!
And about six cups of water, I added some chicken broth seasoning as I didn’t have the broth on hand. Put in some parsley flakes, salt, pepper and Italian seasoning and of course two ham hocks!
Now simmer for about an hour and a half and wuuala! Ooooolala! Luscious soup!
My great dear friend whom I had adopted as my grandma got me hooked on home made soups like this! She has long since passed away, but I always fondly remember her whenever I crochet and make soups! She taught me how to crochet and it was the greatest gift she gave me!!
