My Healthy Work Lunch!

I am sick of sandwiches for work. Since I operate a train and don’t have a lot of time, I have to be creative on what I take for my lunches. I want to lose weight so decided on make ahead salads! The salad I just made will last me a couple of days of work lunches. Then I can do it again! LunchSaladDressingRoastedNutsA “New to me” Chef that I like to watch on t.v. is Amy Thielen of Heartland Table and I used her recipe for strawberry vinegarette dressing and roasted nuts!

For my snacks I have a couple of boiled eggs and a couple pickles! Because I am hypoglycemic I need to make sure I have enough food I can spread out throughout the day.

I also have 33 oz bottled water I take with me! I am excited about my start of my weight loss journey! Wish me luck!!!

    I like Any Thielen! I have only caught her show a couple of times but I would have to say I’m a fan! Your dressing looks wonderful! Good luck, you can do it! I like to munch on frozen banana slices and frozen grapes as a snack! The frozen bananas are really creamy and feel like you’re eating a naughty treat when you’re really eating something healthy!
