


I browned the onion in some olive oil in the dutch oven, then browned the roast on both sides, also put the carrots in to brown some. Deglaze the pan with beef broth, add roast, carrots and onions. I put more liquid in so I would have lots of good juice for making gravy after.
Cover with lid and put in 275 degree oven. I cook my roast for 4 hours since it was a large roast!
Oh my gosh it was a hit with hubby and me!
I made the gravy and home made mashed potatoes too to go with it!
