I had a whole bag of russets that I wanted to prepare and put in the freezer for my future cooking, stocking the freezer! Peel and cut the potatoes, blanch in boiling water for about 4 to 5 minutes, immediately place in ice water bath for for 10 minutes to stop the cooking process.
Place in freezer bags and wrap in freezer paper and foil. Wahlah! Easy to pull out to make potatoes o’brien, or mashed potatoes etc!
