I roasted beets today for the first time. Sis gave me the idea and oh my gosh they are sooooo good! She got me to like asparagus! All through my growing up years I never liked them. Well obviously my tastes have changed! I love them! I used her recipe idea and roasted them in olive oil, lemon juice, fresh Parmesan cheese and salt and pepper!

I will be having some tasty items in my lunches this week!
