I hope that your Saturday is grand! I got 9 hours of sleep which felt wonderful. My back doesn’t like it when I sleep that long but sometime you just need it anyway! Bear and I did our long walk this morning and I cooked up a one pot wonder for hubby and me to enjoy today!
I absolutely love my cast iron cookware collection that I got going! Today I used my cast iron dutch oven!
Heat EVOO in the pot and slice and halve your onions, (NEXT time I am using lots more onion in this dish) brown them and remove to a plate, next add your carrots and brown them some but don’t cook them. plate them with the onions.
Salt your roast and pepper too but I omit the pepper, hubby doesn’t like it so I pepper mine when I serve my own plate! Sear your roast on both sides and then remove to a plate.
Deglaze your pan with either red wine or beef broth.
Place your roast and carrots and onions in the pot, add beef broth, bring to a boil.
Heat your oven to 275 deg. My roast was about 3 pounds so I cooked it for 3 hours. Cook a 4 or 5 pound roast for 4 hours.
Place your lid securely on the dutch oven and let it do it’s thing!
This is what it looked like when you pull it out! I left the lid on while I cooked my potatoes in a different pot. I cooked up a bunch of little golden potatoes!
Then I made a rue with butter and flour in a small teflon fry pan and made home made gravy from the juices!
Now that is one delicious meal!
I got a lot done when this was in the oven cooking, got my laundry done, the dog walked, took my van in for service and tail light and left turn signal needed new bulbs! Didn’t want to risk getting a ticket with no left turn signal! Whew!
Hmmmm, what should I make my hubby and me for dessert??? He’s got some Cherry pie left but I’m thinking something chocolatey! Oh yeah that’s what I’m talking about! tee hee
