I wanted something easy and different for my lunches this week! I go back to work tomorrow after my family care hiatus to care for my spouse.
I looked for a recipe to roast the peppers and onions and oh my gosh they are so good! Then I baked chicken breasts (suggestion from Sis for good protein) to go with the roasted goodness!
Ahhhh lunch is going to be so good tomorrow! Plus I will have fruit for my snacks too!
