I am working on my knit hat project! I just put Eggplant Parmesan in the crock pot! Oh my gosh I am so used to cooking for an army! I can freeze half of this yummy goodness though unless I decide to eat it all! tee hee!
Bear is loving the sunny day and his yard! I am actually able to have my sliding glass door open for some fresh air in my house!!!! Later the heat will have to be turned back on! With me not feeling at my best right now, I am not liking being cold!

Hmmm. Eggplant Parmesan in the slow cooker. How is it? I have never tried cooking it like that before. When I make it it takes hours to prepare.
This recipe is simple, I got it off of Allrecipes.com. I can’t wait to try it. It cooks 4 hours in the crock. I will let you know how it turns out
