The best way that I get my vegetables into me is to make a huge salad! Now how colorful is that!!!! Tastes so very good! Lettuce, arugula, red onion, mushrooms, tomatoes, carrot, English cucumber, celery. Topped with a small amount of dressing and some grated cheese and pepper!
Made for a very tasty dinner! Plus on a hot day it is the perfect meal!
