Today I roasted beets, sautéed the beet tops. Baked Stuffed Bell Peppers for dinners and made mason jar salads for work week lunches. The salad is mixed greens, snap peas, toasted pecans and goat cheese and of course a mustard dressing!
I was unable to eat much of the pepper just now for my dinner but had enough to get a yummy taste of it! The salad hit the spot, I love goat cheese and it really added a bit of richness to the greens!
