
Growing up my Grandma used to make us what she called poorboy sandwiches which we loved. They were her version of it because the authentic ones were from Louisiana which consists of meat, like roast beef or fried seafood such as shrimp or crawfish served on French bread. Mine have Canadian bacon, prosciutto, cheddar cheese, provolone, Ketchup, mayo and mustard on hoagie bun and wrap in foil bake at 350 for 15 minutes to get all warm and melty good! These will be for lunches.

These are simple crock pot cooked boneless, skinless chicken thighs in BBQ sauce! This make ahead meal will be served with rice and a salad this week! Super simple stress free cooking! tee hee!

Now that all my chores are done, time to go and relax with my best little fur friend Gizmo! She is the light of my life! Time to watch some TV before bed time and start our work week! YUCK! tee hee!
