These pinto beans just came out of the Instant Pot and they are so good! I will be taking some in my lunches for work!

Trying something new! I made English Muffin bread which is supposed to make awesome toast! Going to have that with my oatmeal in the mornings! Yum! They are a little uneven in size, hard to work with as it is a sticky dough. Next time they will be better! tee hee

I didn’t have cilantro and I needed mine to be not spicy so this is just tomatoes, onion parsley and lemon juice with a little bit of flaky salt

Mixed greens, broccoli, celery, and pico de gallo and my home made dressing

Dijon mustard, good quality honey and some lemon juice is my dressing! Wow this is a good salad!

Dinner consisted of acorn squash and a pan of sauted vegetables. I baked a jalapeño cheddar quick bread at it is so very tasty!

I have been making home made French bread and it is so good! I made some for my sis too!

I have been making my own sandwich bread too which is so good! I don’t want to buy bread from the store anymore! Gizmo loves the bread too!

Today I made home made Hot Buttered Rum batter to take to my Sis as she loves having that for winter drinks! I had to sample it and wow it is good! Now I can keep her stocked up when she can’t find it in the store. She may even like mine better!

I made pasta fagioli in my instant pot this morning. Next time I will use can great northern beans as my beans were not quite all done but wow the flavor is fantastic!

Gizmo and I wish you all a wonderful New Year! She has been enjoying me being home on vacation and this time we made it a very lazy one which felt so good!
