Gizmo was such a good girl when we house sat for someone special! She was funny and would not let me out of her sight since she was in new territory!

I made Italian stuffed peppers with Orzo! This is the first time I have ever made stuffed peppers and it is definitely a keeper for make ahead food!
I also did a big batch of Lemon squeezy, blueberry, cream cheesy pancakes and they are fabulous! In the ams when I have them I will top them with lemon juice and powdered sugar!

I bought beets to roast, so I cut off the tops and did a sauté of onion, the tops and shrimp! Wow fabulous! My decadent snack!

I have been working on my blanket all week and am not far from being done with it! I can’t wait to show the reveal. I will use my regular camera to hopefully capture the true colors as the granny square looks blue and it is actually a green color.
Gizmo has been thoroughly enjoying me being home! Back to the grind tomorrow, tee hee!

My azalea is blooming so pretty, I wished it stayed in bloom longer! Today I made chicken salad and an oven roast for this weeks meals and lunches. The recipes are from Trisha Yearwood’s Georgia Cooking in Oklahoma Kitchen. They are super delicious!
The chicken salad will be made into sandwiches for lunches!

Happy weekend wishes even though it is almost over! I made the mistake of letting someone talk me out of my treadmill, and I was using my elliptical but it did not work out for me as well as the treadmill. So I went and purchased myself a new one and they took the dreaded elliptical away! Yay, I did my workout today and I am so happy!

I made Hoppin’ John salad for this weeks lunches! For my dinner tomorrow I baked a couple of chicken thighs topped with some marinara sauce! Make ahead meals saves so much time!
I am super tired, got all my yard stuff done today because it is supposed to rain all week! It needed to get done. My reward was sitting on my deck enjoying a beverage in the nice sunshine!
My best little fur friend was enjoying the nice weather too! Now time to just relax before bed for the work week!

Yay, finally we are having some signs of spring. Our weather has been still like winter cold and wet and rainy! I am ready for warmer weather!

Hard to believe we are still have winter weather and cold temps in April! We are so ready for warmer temps, tired of feeling cold!

Cooking on vacation consisted of eating a little better by making salads, doing a veggie saute, tried my hand at making home made fried rice! I also made breakfast burritos to put in the freezer for make ahead meals!
Happiness was being with my best little fur kid Gizmo! Here she was dancing for her dinner! I didn’t do much crafting on this vacation. I need to get back into it but have been enjoying a hiatus from crafting for a while! I finished a very good series that someone special lent to me “Damages” with Glenn Close! It was very very good series!
Back to work tomorrow, boo hoo!
