Cooking New Things! Blondie’s Kitchen

This is the first time I made egg rolls! These had pork in them and they are delicious! I froze some to cook later on!

This is the first time I made fried wontons and wow these are so good!

I cooked a few for my snack and put the rest of the filling in the freezer to cook at a later time!

This is jasmine rice with Cole slaw added and hoisin sauce for yummy dinner goodness!

This is beef, bean and cheese burritos for the freezer to heat up at a later time! Wow this is so good too!

Tonight’s quick meal was a small piece of cod pan fried, and air fried asparagus! This made two meals as the second piece of cod and asparagus is in the fridge for tomorrow!

It is fun branching out and not cooking the same old things over and over again!

Homemade Soup Goodness

The soup has to have the trinity of celery, onion and Bell Pepper!

Threw in a ham bone from the freezer for flavor goodness!

Yesterday I roasted tomatoes and threw those if for awesome flavor! They are delicious to eat on their own as a side dish but I could not resist putting them in my soup!

Wow the soup is so good! I used black beans from my pantry! It is a simple soup with lots of flavor! Perfect for when you don’t feel like going to the store! Just throw in the crockpot and let it do the work!

Vacation Is Over….Sooo Sad! Tee Hee

I went on an adventure and drove and visited my friend! Had a great time seeing her!

Thankfully I have AC that works good as we are in a heat wave as I know many states are dealing with that worse than what we are here. I had a chicken breast I needed to cook so I made a small quick batch of chicken soup! I didn’t have any carrots on hand but it is still souper delicious, tee hee!

Mapo Tofu with Pork and Rice

I just made Molly Yeh’s recipe of Mapo Tofu with Pork and Rice and wow it is delicious! You can adjust the spiciness to your liking. I had to tone mine down because I have to be careful with spicy even though I adore spicy foods!

You can get her recipe on food network or her website! This is a keeper and so simple to make

A Wok of Yakisoba Goodness

Last night I marinated Tofu in teriyaki sauce over night. I came home and threw in red bell pepper, asparagus, yellow squash, green onions, yakisoba noodles, spinach and garlic and sautéed to yummy goodness! I forgot to say there is cabbage in there too!

My Make Ahead Salad for Work

I made this easy Greek salad for this weeks work lunches! I got the awesome containers from Amazon! The ones I ordered came with 10 so I split them with my Sis so she can do make ahead lunches too!

This saves so much time during the week! I love it!

Easy Skillet Pork Chops

I used thin boneless pork chops to make this quick yummy meal! Seasoned with chili powder, seasoned salt and thyme. Chopped onion, red bell pepper, celery, tomatoes, some Louisiana Hot Sauce! Sautéed the chops in some Olive Oil seasoned side down for about a minute. Turn them over and pour all the veggies on top, cover with a lid and cook for 25 minutes!

Super simple and delicious! Sorry that you can’t see the baby chops as they are smothered in the veggie goodness! I love how colorful the meal is!

Food From My Kitchen

I made this Fattoush salad recipe from Jamie Oliver’s 5 Ingredients cook book! It was delicious!

This meal was of blistered fresh green beans, butter lettuce, walnuts and garlic goat cheese and a mustard dressing!

Ahhh baked ribs! yessssss!

I stopped at a farm and got cabbage! I blanched it and packaged it for the freezer to use for future soups!

Happy Sunday Wishes

Look at what a friend made for me to remember Gizmo! It is so awesome! I will share the wall when I get photos of her up for my artwork to enjoy! She was very photogenic and I want to display her because she was such a sweet soul!

I am keeping myself busy so I am not so sad in missing my little girl! I know I have to adjust to the fact that she is gone! I am grateful I got to have her for the time that I did!

I roasted a whole chicken this morning and then made broth with the carcass so I made a small batch of chicken soup! Yum Yum! Comfort food! Yay!
