I did all of my chores on Saturday and that included cooking for my work week meals. I made home made chicken/veggie broth, baked a pork roast and made Cabbage Rolls without the “rolls” hahaha! Along with the cabbage meal I made cauliflower mash instead of mashed potatoes because I don’t need the carbs!

My tummy will be happy this week! tee hee

Sundays I cook for the workweek which makes life easier! I am trying new recipes and the stars of this weeks menu is stuffed eggplant, tuna salad and I roasted the extra eggplants that I had.

Today I roasted beets, sautéed the beet tops. Baked Stuffed Bell Peppers for dinners and made mason jar salads for work week lunches. The salad is mixed greens, snap peas, toasted pecans and goat cheese and of course a mustard dressing!

I was unable to eat much of the pepper just now for my dinner but had enough to get a yummy taste of it! The salad hit the spot, I love goat cheese and it really added a bit of richness to the greens!

Lentil kielbasa soup cooked in my crock pot! It is very tasty and will be a very delicious meals for this week!

I have soup soup cooking in the crock pot but it has a way to go before it is done. I had some cream cheese left over from holidays so I whipped up this simple pasta with garlic, leeks, kale and cream cheese sauce! Wow tasty simple dinner!
