I am tired, I had quite a bit to do today, some outside chores that had to be done and cooking for this weeks meals. Oh my gosh the rice ended up being a lot but one pan will go into the freezer for future meals! I love cooking a lot for make ahead meals! Makes life simpler!
I can officially rest now for the rest of the evening! Yay!!!!

Yesterday I had a very fun and relaxing day with my Minions at the beach! The weather was perfect!

I sautéed beet tops with red cabbage seasoned with salt, pepper, red pepper flakes, and garlic all in some olive oil! Wow so simple and so good!
I love sheet pan cooking, I roasted tiny potatoes with onion, and beets with some olive oil, seasoned with salt and pepper! So simple and is perfect for my lunches this week! Along with that I have a small amount of roasted chicken. A bag of veggies of broccoli, English cucumber and a tiny orange. Silly me I can’t remember what the little oranges are called!
It feels good to get my lunches all ready, so in the mornings all I have to do is get ready and eat some breakfast!

I put the casserole in the freezer for a make ahead meal! I have Gartner’s Meat Market ribs in the crock pot and I just made home made Beer Bread to go with it.

Last week I had bought a package of sliced turkey and sliced ham for sandwiches. When I got home I realized there was a LOT in the packages. I didn’t want the meat to go bad so the ham went into my soup I made. This morning I put the turkey in this casserole!
It consists of egg noodles, cream of mushroom soup, milk, a small amount of grated cheddar and some parmesan cheese I grated. It has vegetable medley in it too! Now the turkey slices won’t go to waste! Next time I will make sure the buy smaller packages!

I wanted simple and easy dinner tonight. The other day I had two onions I needed to use so I carmelized them and put them in the fridge. After work today I did a quick soak on the beans then put them in the pot with the onions and I had left over sandwich ham slices so those got chopped up and put in the pan too. I added just a little bit of small pasta also! Seasoned with salt and pepper, I let it simmer until tender!
Wow, very tasty and I got to use up items in my fridge! What I love about soups is there are no rules! My wonderful friend (adopted Grandma Mary) taught me that about soups!
