I baked this chicken and it was soooo good! Here is the recipe:
2 cups panko (I didn’t have any on hand so I used Krusteaz Bake & Fry coating mix)
1/2 cup parmesan cheese
3 tablespoons olive oil, plus more to oil the wire rack
Salt
1/2 cup mayonnaise
1/4 cup whole milk
4 teaspoons thyme
4 boneless, skinless chicken breasts
Heat oven to 400 deg. Line a baking sheet with aluminum foil and fit it with a wire rack. Lightly oil the rack with olive oil and set aside.
In three separate pie plates, first one put olive oil, second one put panko or Krusteaz and the cheese, the third one put the mayo, milk and thyme (whisk to combine). Set aside
Cut each chicken piece in half crosswise. I put the chicken pieces in a large ziploc bag, flatten the pieces with a mallet to make the chicken even.
Take each piece, rub in the olive oil, season with salt, dip each piece in the mayo mixture, then coat really good in the panko or Krusteaz mixture. Place them on the wire rack and bake until the chicken is golden brown and cooked through, about 40 minutes.

We had mashed potatoes and gravy and a large salad with our dinner and it was so good!!!

Saw this little spider and his beautiful web the other morning. I wonder how long it took this little guy to create his web. 
I saw these sky high beauties when Bear and I took our walk yesterday. I can’t resist taking photos of them! I am amazed at how many people in our neighborhood have them. I think next year I will try my hand at having them too in my yard!

when Bear and I were starting our walk, these two doves were on the ground and flew up to the wire. They are so kewl to watch and I love listening to them too.
This little home has 3 bedrooms and 1 bath, it has only 480 square feet of space. It was built in 1950. The new owners have made the yard quite beautiful! I wonder if they decorated using IKEA to live in such a small space!

I loved writing poetry when I was younger and need to get back into it again! It’s fun, therapeutic! Part of the poem is wrong in that I was raised by my Grandparents and my Grandfather was a wonderful father figure for me! He was the best!!!! I had a yearning though to know my own dad and my step-father should not have been around in our lives!

Ok my friends gave me my nickname as a term of endearment a lonnnnng time ago! Well I have to have my signature dessert to go with my nickname! My family loves this dessert so I promised I would make it for them this weekend! It looks so good! Here is a pic of my “Blondies”!!!!!
Now isnt’ that a beautiful jar of pure maple syrup?? I used the best ingredients in my dessert! It’s in a glass jar too! Awesome!!!

The owners repainted their house, I love the red door!
I brought my better camera with me this morning on my walk with Bear and got some better pics of things I enjoy looking at on our daily walks! This addy art turned out much better!

It is amazing how things can change in a city in the blink of an eye. Imagine if you were to move away for a while and decided to come back to your city and think “Holy Cow look at all the changes”! I did that just going through Canby yesterday!! Here are some changes that I have noticed along the way!
Some kind of big change to this building. Will be interesting to see what they have planned here!!
Changes in our train yard in preparation for more rail extension. Watch out! Man in a hole!! tee hee! The guys were good and endured my snoopiness!!!!
The Vista Bridge is a historical bridge and unfortunately a lot of suicides have occurred off this bridge which goes right over our tracks. Well here we can see CHANGE. They added fencing on both sides to hopefully prevent any more suicides off it in the future.
Here they are making big changes at 7th and Holladay St. Hmmm what in the heck are the dudes up to???
Now that is a BIG drill!!!!! Huh, Huh. Huh, MORE POWER as Tim the Tool Man Taylor would say!!!!!
This building is turning out nice! In my career of going by this everyday I have seen it as the old George Smith Warehouse, then it changed to Standard TV and Appliance Warehouse, now it is a Sprinkler company going in there. Nice paint job!!!!
Changes can happen slowly and some happen so fast! It is amazing to watch them all happen!
